High-priced, exclusive, heavy with tradition. Burgundy’s certainly got a reputation, and it’s not for nothing either. But the last 15 years have ushered in some exciting new developments, and a different set of associations now comes to mind. Burgundy? Why, that’s courageous, authentic, young, accessible! All that is thanks to the winemakers of a new generation who have dared to take the leap into this established region, sometimes from far away. Their approach fuses a deep-rooted appreciation of Burgundy‘s unique terroir and flavours with modern, ecological approaches to viticulture. This is your opportunity to get to know the protagonists of this new Burgundy up close and personal – in our 7-part wine dinner series.

“I don’t want to be the hype,” says Catharina Sadde from Les Horees – but it seems the wine world just won’t listen. Since 2019, Catharina and her husband, Guilhem, have been making waves in Burgundy with wines that sell out fast and command eye-watering prices. But don’t be fooled. What Catharina is doing on the 4.1 hectares she owns in Beaune is about far more than riding fleeting trends. It’s rooted in an unwavering commitment to quality, craftsmanship, and sustainability – not just oenologically, but on a human level, too. Her wines reflect long-term relationships, deep-rooted connection to the terroir, and meticulous attention to detail. All vines are farmed organically and biodynamically. This is where ‘low intervention’ means the opposite of ‘low effort.’ On the contrary: minimum intervention demands maximum effort in the vineyard, all in the service of creating only the healthiest, ripest grapes. There’s no place for shortcuts. Each grape is assessed and carefully sorted by hand. Catharina avoids sulphur in the winemaking process, trusting only in the power of wild yeasts. In October 2024, Catharina was able to secure a new plot in Beaune Premier Cru Les Reversés, adding to her existing parcels  in Beaune Les Prévolles, Volnay, and Pommard. We can’t wait to see what she’ll come up with!
