Small Meals

Grilled white asparagus, “Fromage Blanc” and blackcurrant wood oil

We like to go foraging for wild herbs in the Tegeler Forst. Their bitter taste is a nice contrast to the aromatic sweetness of Rainer Guhl’s asparagus, which comes out especially well when grilled. The addition of Fromage Blanc from Erdhof Seewalde and blackcurrant wood oil makes for an exciting new take on asparagus.

Our small meal keeps in the fridge for about two days. Have it as a snack for lunch or combine it with other dishes for supper. Just heat up the asparagus and herbs in a frying pan, salt to taste and then add the Fromage Blanc on top.

Handmade Tyrolean ravioli with fresh salad from Johanna Häger (Hof Ilse und Hans) 

Our sous chef Thomas Hedde-Leitner hails from South Tyrol and has shared with us this traditional recipe for ravioli-style pasta, filled with potato and cheese from Backensholzer Hofkäserei. Pop it in the pan, fry briefly, and enjoy with fresh salad from Johanna Häger for an easy but very satisfying lunch or dinner. Keeps in the fridge for 2-3 days.

Potato soup 

A true Micha Schäfer classic which dates back to 2016. Micha being grumpy Micha he hasn’t made it since, even though our guests kept asking for it. The secret ingredient is smoked butter, which lends an almost meaty flavour to the soup despite the fact that it is perfectly vegetarian. Works wonderfully well with the blackpudding. 

Once you’ve opened the glass, keep it in the fridge and finish it within the next 2 to 3 days.

Black pudding from Gut Hirschaue

Finally! Here’s a black pudding whose original taste isn’t masked in spices. Have it with fried potatoes for a traditionally German experience, as a cold cut for breakfast or on good bread with a lot of butter. You can also cut it into the warm potato soup. Completely up to you.

Bread & Baked Goods

Rye sourdough bread from Brotwerk - Florian Domberger

Artisinally crafted, 100% rye sourdough bread as you know and love it from an evening in our restaurant. The leavening process takes 20 hours and makes for a wonderfully aromatic bread even without the addition of any herbs or spices. This bread contains gluten and keeps for 5-6 days.

Gluten-free seed bread 

For all those among you who don’t like or can’t eat gluten – and for everyone else too. This bread does away with all the nasty preconceptions you might have around gluten-free bread. It’s juicy, textured and rich, made from sunflower seeds, oats, linseed, hemp seed, hazelnuts and Grafschafter sugar beet syrup. Here’s the recipe if you’d like to try your hand at baking

If you have a large freezer at home, we’ll be happy to send you a bigger batch frozen. 

Unfortunately, if you suffer from celiac disease this bread isn’t suitable for you.

Kuhhorster crunchy oats, caramelised with Stimmer’s hazelnuts and Vivian Böllersen’s walnuts, butter and sugar. Pure, simple and delightful. Comes in a classic Weck jar.

Cream cheese tarte

Our cream cheese tarte is flavoured with Hermite (a herbal liquor) from Maristenkloster St. Josef. The other main ingredients (egg, cream cheese) hail from David Peacock’s Erdhof Seewalde and are of incredible quality. This adds an almost wine-like complexity to the tarte. Still, it won’t get you tipsy.

2020 Spring butter made with cream from Erdhof Seewalde  (pasteurised)

As of a few weeks ago, David Peacock’s cows (Angler Rotvieh) are once again spending 22 hours per day outside, basking in the spring sun. You can taste it in the butter, too!

Cream cheese from Erdhof Seewalde 

Refreshing and tart, this cream cheese is the perfect addition to your breakfast. It also makes for a wonderful cheesecake. Check out our recipe here.

As for the use-by date: trust your sense of taste. We find that the cream cheese is perfectly fine to eat even two weeks after the use-by date.

A glass of pork lard with greaves 

Made from fat and greaves of Husumer Landschwein from Erdhof Seewalde with only a little bit of salt from the Luisenhall saline. Delicious on a slice of rye bread, with roasted vegetables or to scoop directly from the glass.  

Keep in the fridge after opening. We’re legally required to provide a use-by date, but the lard really does keep forever and a day. Rely on your sense of smell and taste to be sure.

Hazelnut butter by Kristiane Kegelmann – Pars Pralinen

Pure and intense. pars Pralinen’s hazelnut butter is made from Martin Stimmer’s hazelnuts and a little salt. Add to your musli, your sandwich or have it straight out of the jar.

Condiments

Blackcurrant wood oil 

Freshly cut blackcurrant wood, extracted overnight in rapeseed oil from Fläminger Genussland. A beautiful addition to any salad, yet as versatile as olive oil. 

Keep refrigerated to preserve the flavour.. It keeps as long as your normal olive oil, although we suspect you’ll be using it all long before it has a chance to go bad. It’s simply too tasty!

Wild juniper oil 

Green juniper berries extracted overnight in rapeseed oil from Fläminger Genussland. Every year, our friends at Müritzfischer go foraging for wild, green juniper berries, which are altogether more elegant and subtle in taste than their dried cousins. Use in salad for a wonderful ethereal note or add to yogurt or cream cheese. Also goes extremely well with fresh vegetables or anything barbecued. 

Will keep best in the fridge. So tasty that you’ll use it all long before it has a chance to go off.

2019 Verjus from Frank Kaltenthaler Pfalz

Adds wonderfully fruity and grapy notes  to any salad dressing. Still, verjus is far more than a substitute for lemon and vinegar. Rich in tartaric acid, verjus brings out the flavours of any recipe that would normally call for wine.

Fleur de Sel from Saline Luisenhall, Göttingen

The Luisenhall Saline, Europe’s last operational pan saltwork, is a relic from a different era. Within a year, it barely yields as much as major industrial saltworks do on any ordinary day before taking their lunch break. The quality is altogether different, too – as you would expect from such small-scale, artisanal production. This salt is as pure and fine as it gets. If you’re ever in Göttingen, be sure to visit the Luisenhall facilities.

Pickled mustard seed 

Mustard seed from Fläminger Genussland in Frank Kalthentaler’s excellent apple vinegar. The pickled mustard seed retains some bite and a mild, deep aroma – it’s only upon being ground that mustard becomes spicy. For that reason, our pickled mustard seed is less dominant than regular mustard, so you can use it for more than just sausages, e.g. roasted vegetables. 

Keep in the fridge once you’ve opened the glass. It will keep as long as regular mustard.

Smoked butter

Clarified butter, gently smoked over beech wood – the not-so-secret ingredient in Micha’s legendary potato soup. Perhaps the taste of beech wood smoke will remind you of bacon, eel or trout. It’s no surprise that it is mostly greasy foods that are prepared in this way: smoke aromas only develop in fat. Still, they’re great with anything savoury. Add our butter to asparagus, potato or meat and fish. Just be sure to use it sparingly as it packs quite a punch.

Sauces

Wild game stock 

Bones, meat, water, some salt and a lot of patience – that’s the ingredient list for our wild game stock, made with wild game hunted in the Schorfheide by Jörn Korte. Our meat stock takes several days to simmer on a small flame and is perfect for any sauce or soup. Another great way to use it is to glaze vegetables in the pan. 

Keep the glass in the fridge once it’s open. Watch out - this stock is highly concentrated. Add 500ml of water for a rich sauce, 3-4 liters make for a great soup/stock.

Fresh Fruits & Vegetables

Fresh rhubarb

Two of our suppliers – Bauernhof Weggun and Teltower Rübchen – have got wonderfully thin, young rhubarb and we’re happy to share it with you. You won’t even have to peel it! Combine it with our cherry blossom sugar or the Mühldorfer Weißbier ice cream for a tasty treat.

Asparagus

You’d be forgiven for not understanding the annual German asparagus craze if you’d never tasted 

anything other than the industrially farmed wood that passes for “Spargel” in most establishments. Give Rainer Guhl’s a try instead. It’s so sweet, complex and tender that you can eat it raw. No joke. That’s because Rainer’s asparagus is farmed the way it should be: with no foil or fertiliser to accelerate growth. It takes its sweet time to be ready, but the difference in quality is immense.

Fill up your freezer with our very own Nobelhart ice creams and sorbets: for your next Netflix binge or to satisfy those early spring cravings for something fresh and fruity. All our sorbets and ice creams are made exclusively with the kind of high quality ingredients you’ve come to expect from us – delicious cream, great eggs, sugar and fully ripe seasonal fruits.   • Rhubarb Sorbet - We’ve used only the thinnest rhubarb from Bauernhof Weggun and Teltower Rübchen, which lends a lighter, more floral note to the sorbet. Served with woodruff meringue. Add a dash of schnapps if you feel so inclined.

  • Sorrel Sorbet – Made from Olaf Schnelle’s sorrel, served with ethereal dill flower meringue. Perhaps you remember the tartness of sorrel from playing in the meadows as a kid. Well, this sorbet has it in spades. A classic combination of flavours, hailing from Villa Merton in Frankfurt. Works wonderfully well with a glass of schnapps, such as Landgut Preschen’s chicory root spirit. (How do you mean that’s not one of your household staples? In that case, vodka or gin will do just fine.)

Wine & Glasses

We’ve got cellars full of wine and we need you to drink it. 

Don’t go looking for Grauburgunder  – our wines are full of character, just like the people and terroir they’re from. If you are searching for special and rare, have a look at our wine list and get your own  bottle (or, better yet, several). We’ll adjust the prices accordingly.

You might be used to drinking less pricey wine at home than you do at a restaurant – there’s no shame in it! However, since we’re selling you wines you would normally have at the restaurant, these are a tad more expensive. Still, we’re not charging you as much as we would at the restaurant, but have matched our prices with winesellers.   

Yes, wine and what it costs… that’s a whole different story. Take it from one of Billy Wagner’s mentors, Martin Kössler, who has been one of Europe’s foremost winesellers for over three decades. Have a look at this video

This explains why there is such a leap from the supermarket shelf to high-quality winesellers. Be warned, once you’ve tasted the good stuff, it’s hard to go back!  However, the bottom line is this: we make sure to price our wines fairly and only add a small margin.

Pear juice with juniper

We add fresh green juniper berries, collected every year by the Müritzfischer. Compared to dried juniper, fresh berries are rather more fine and elegant. They take the edge of the cloying sweetness of pear and add a nice ethereal note. Top it off with ice cold sparkling water for a delicious alcohol-free longdrink. If you need a little bit of a buzz, add some pear spirit!

The red brawn is on the very old sausage recipes that have their origin in home butchery. Small Meals

Grilled white asparagus, “Fromage Blanc” and blackcurrant wood oil

We like to go foraging for wild herbs in the Tegeler Forst. Their bitter taste is a nice contrast to the aromatic sweetness of Rainer Guhl’s asparagus, which comes out especially well when grilled. The addition of Fromage Blanc from Erdhof Seewalde and blackcurrant wood oil makes for an exciting new take on asparagus.

Our small meal keeps in the fridge for about two days. Have it as a snack for lunch or combine it with other dishes for supper. Just heat up the asparagus and herbs in a frying pan, salt to taste and then add the Fromage Blanc on top.

Handmade Tyrolean ravioli with fresh salad from Johanna Häger (Hof Ilse und Hans) 

Our sous chef Thomas Hedde-Leitner hails from South Tyrol and has shared with us this traditional recipe for ravioli-style pasta, filled with potato and cheese from Backensholzer Hofkäserei. Pop it in the pan, fry briefly, and enjoy with fresh salad from Johanna Häger for an easy but very satisfying lunch or dinner. Keeps in the fridge for 2-3 days.

Potato soup 

A true Micha Schäfer classic which dates back to 2016. Micha being grumpy Micha he hasn’t made it since, even though our guests kept asking for it. The secret ingredient is smoked butter, which lends an almost meaty flavour to the soup despite the fact that it is perfectly vegetarian. Works wonderfully well with the blackpudding. 

Once you’ve opened the glass, keep it in the fridge and finish it within the next 2 to 3 days.

Rye sourdough bread from Brotwerk - Florian Domberger

Artisinally crafted, 100% rye sourdough bread as you know and love it from an evening in our restaurant. The leavening process takes 20 hours and makes for a wonderfully aromatic bread even without the addition of any herbs or spices. This bread contains gluten and keeps for 5-6 days.

Gluten-free seed bread 

For all those among you who don’t like or can’t eat gluten – and for everyone else too. This bread does away with all the nasty preconceptions you might have around gluten-free bread. It’s juicy, textured and rich, made from sunflower seeds, oats, linseed, hemp seed, hazelnuts and Grafschafter sugar beet syrup. Here’s the recipe if you’d like to try your hand at baking

Our cream cheese tarte is flavoured with Hermite (a herbal liquor) from Maristenkloster St. Josef. Still, it won’t get you tipsy.

Refreshing and tart, this cream cheese is the perfect addition to your breakfast. It also makes for a wonderful cheesecake. Check out our recipe here.

Freshly cut blackcurrant wood, extracted overnight in rapeseed oil from Fläminger Genussland. A beautiful addition to any salad, yet as versatile as olive oil. 

Keep refrigerated to preserve the flavour.. It keeps as long as your normal olive oil, although we suspect you’ll be using it all long before it has a chance to go bad. It’s simply too tasty!

Wild juniper oil 

Green juniper berries extracted overnight in rapeseed oil from Fläminger Genussland. Every year, our friends at Müritzfischer go foraging for wild, green juniper berries, which are altogether more elegant and subtle in taste than their dried cousins. Use in salad for a wonderful ethereal note or add to yogurt or cream cheese. Also goes extremely well with fresh vegetables or anything barbecued.

2019 Verjus from Frank Kaltenthaler Pfalz

Adds wonderfully fruity and grapy notes  to any salad dressing. Still, verjus is far more than a substitute for lemon and vinegar. Rich in tartaric acid, verjus brings out the flavours of any recipe that would normally call for wine.

Fleur de Sel from Saline Luisenhall, Göttingen

The Luisenhall Saline, Europe’s last operational pan saltwork, is a relic from a different era. Within a year, it barely yields as much as major industrial saltworks do on any ordinary day before taking their lunch break. The quality is altogether different, too – as you would expect from such small-scale, artisanal production. This salt is as pure and fine as it gets. If you’re ever in Göttingen, be sure to visit the Luisenhall facilities.

Pickled mustard seed 

Mustard seed from Fläminger Genussland in Frank Kalthentaler’s excellent apple vinegar. The pickled mustard seed retains some bite and a mild, deep aroma – it’s only upon being ground that mustard becomes spicy. For that reason, our pickled mustard seed is less dominant than regular mustard, so you can use it for more than just sausages, e.g. roasted vegetables. 

Keep in the fridge once you’ve opened the glass. It will keep as long as regular mustard.

Smoked butter

Clarified butter, gently smoked over beech wood – the not-so-secret ingredient in Micha’s legendary potato soup. Perhaps the taste of beech wood smoke will remind you of bacon, eel or trout. It’s no surprise that it is mostly greasy foods that are prepared in this way: smoke aromas only develop in fat. Still, they’re great with anything savoury. Add our butter to asparagus, potato or meat and fish. Just be sure to use it sparingly as it packs quite a punch.

Sauces

Wild game stock 

Bones, meat, water, some salt and a lot of patience – that’s the ingredient list for our wild game stock, made with wild game hunted in the Schorfheide by Jörn Korte. Our meat stock takes several days to simmer on a small flame and is perfect for any sauce or soup. Another great way to use it is to glaze vegetables in the pan. 

Keep the glass in the fridge once it’s open. Watch out - this stock is highly concentrated. Add 500ml of water for a rich sauce, 3-4 liters make for a great soup/stock.

Fresh rhubarb

Asparagus

You’d be forgiven for not understanding the annual German asparagus craze if you’d never tasted 

anything other than the industrially farmed wood that passes for “Spargel” in most establishments. Give Rainer Guhl’s a try instead. It’s so sweet, complex and tender that you can eat it raw. No joke. That’s because Rainer’s asparagus is farmed the way it should be: with no foil or fertiliser to accelerate growth. It takes its sweet time to be ready, but the difference in quality is immense.

Works wonderfully well with a glass of schnapps, such as Landgut Preschen’s chicory root spirit. (How do you mean that’s not one of your household staples? Don’t go looking for Grauburgunder  – our wines are full of character, just like the people and terroir they’re from. If you are searching for special and rare, have a look at our wine list and get your own  bottle (or, better yet, several). We’ll adjust the prices accordingly.

You might be used to drinking less pricey wine at home than you do at a restaurant – there’s no shame in it! However, since we’re selling you wines you would normally have at the restaurant, these are a tad more expensive. Still, we’re not charging you as much as we would at the restaurant, but have matched our prices with winesellers.   

Yes, wine and what it costs… that’s a whole different story. Take it from one of Billy Wagner’s mentors, Martin Kössler, who has been one of Europe’s foremost winesellers for over three decades. Have a look at this video

This explains why there is such a leap from the supermarket shelf to high-quality winesellers. Be warned, once you’ve tasted the good stuff, it’s hard to go back!  However, the bottom line is this: we make sure to price our wines fairly and only add a small margin.

Pear juice with juniper

We add fresh green juniper berries, collected every year by the Müritzfischer. Compared to dried juniper, fresh berries are rather more fine and elegant. They take the edge of the cloying sweetness of pear and add a nice ethereal note. Top it off with ice cold sparkling water for a delicious alcohol-free longdrink. If you need a little bit of a buzz, add some pear spirit!

Cosmetics

A small bottle of Nobelhart hand soap – “Red Brawn” by  Frank Leder

The red brawn is on the very old sausage recipes that have their origin in home butchery. Next to pork rind, fresh blood, and the remains of the head of a pig, the butchers of the Franconian countryside use spices like marjoram, pepper, cloves and allspice. These seasonings lend the soap its aromatic, spicy notes and soothing effect.

“Masterwort and Honey” Hand Lotion by  Frank Leder

Aside from its ability to drive out evil spirits, masterwort has also been used as an ingredient in the panacea orvietan. Mixed together with honey, the remedy has been touted by charlatans as a secret formula since the 16th century. The essential oils of the masterwort combined with real bee honey give this lotion its fragrant scent and regenerative effect on the skin.

  • We deliver within the Berlin S-Bahn Ring if your order exceeds €120.00. Unfortunately, we cannot ship foods.
  • You are of course welcome to come and pick up your order at the restaurant. We’ll greet you with masks!
  • You can order anything from this list as an addition to your order with Nobelhart & Schmutzig Daheim delivery. In this case there is no minimum order.
  • Stocks are limited. The sooner you order, the better we’ll be able to plan with our producers and suppliers.
  • As with booking a table in a restaurant, it’s possible that we run out of of delivery/pickup capacity.
  • We’re available by phone from Tuesday to Saturday, from 10am to 6pm (+49 30 259 4061-0)
  • Your order will be delivered between 5 pm and 8pm. Of course, we’re happy to deliver to your office/studio/etc.
  • Payment is by credit card upon placing your order, regardless of whether you opt for delivery or pickup.
