What, you’ve never been to Albania? That means you probably don’t know Mullixhiu, run by Bledar Kola. You’ve got to go there, Ursula Heinzelmann told me. We listened, and on our way to Greece we took a detour through Albania, landing in the hopping capital city of Tirana, where this country is going through a post-Communist consumer high. And at the heart of it all: young Bledar Kola and his little Mullixhiu. He’s headed in precisely the opposite direction, back to the roots, to the grandmothers, creating Albanian cuisine in an entirely new/old way. 

It’s so worlds ahead of what other people are doing that it’s almost subversive — and not just thrilling in an intellectual way, but also truly delicious.
