Königsberger Klopse – Tuesday till Thursday in March

18. Feb 2024

Königsberger Klopse are one of the few authentic classics of North German cuisine – deliciously moreish little meatballs made of veal in creamy white sauce with capers. Any self-respecting German grandma has her own signature recipe, and we’d be loath to compete with that. We’re not beyond trying to compete with Tim Raue however. And while he’s got Königsberger Klopse on his current menu, we’ll be offering our take every Tuesday till Thursday in March. (Not as part of a set menu, but to have individually – although you’re welcome to order any and all dishes you might like alongside.)

Our version, says Micha, is all about memory and tradition. For our meatballs, we’ll be using shoulder and leg of calf from Erdhof Seewalde, of course, but beyond that, we’re allowing ourselves a small exception to our usually strict “vocally local” doctrine through the inclusion of Luxeapers Capucines capers. (We did experiment with pickled Brandenburg blossoms, but it just wasn’t the same.) As our goal is to capture the emotional core of the dish, we’re not going to make any changes for the sake of doing so. We’re cooking up the real, authentic version – except with better produce.
